I just looked at prices from my local chippy, and everything has doubled in price in the last 8 years.

I suspect a good chunk of this is due to increases in electricity costs. While it went up to a cap for residential users in the UK, businesses had no such limit and around the time Russia invaded Ukraine it went to stupid levels. The only places that haven’t increased costs by a huge margin were those charging a king’s ransom anyway (mostly pizza places), and a couple of tiny Chinese restaurants that mostly use gas for cooking rather than electric.
This isn’t Nvidia’s fault though.
It went live so you could play anything on it and publishers pitched a fit. Presumably because they’d sold exclusive streaming rights to somebody else.
Even though it’s literally none of their goddamn business where you run the games you already paid for.
