So, I’m far from knowledgeable enough to help you fully, but it seems like something is wrong with the games rather than with your wheel. If DR2.0 and oversteer both work (I’m assuming you mean with proper ffb) then that means that the wheel is being detected by your computer and that the driver, which for the g920 is already built into the kernel according to new-lg4ff, is working.
Like I said, I unfortunately can’t help you other than suggesting reinstalling the games or using a different proton version, but hopefully this is enough to help you find a proper answer

I don’t have any experience with any of these mods so I can’t say OPs exact grievances, but it seems like he’s saying that some of these mods do extra stuff on top of fixing bugs that he doesn’t like
This might sound weird but the first game that came to my mind was cod. If the goal is only to familiarize her with the controls then you don’t even need to play online. Just load up in a private lobby alone and learn how to walk while looking around, add in sprinting and jumping, then figure out how to aim and shoot at stuff (stationary if necessary). I imagine that if she’s able to get comfortable with all that then she’ll be fine with literally anything else.
Other than that just play games that you’re both interested in and the controls will come with it

Started playing through the Assassin’s Creed series again but completely disabling the hud, even the minimap. I did have to open the big map frequently at the beginning but you get used to it and it just feels cool having to scope out/explore an area to find and get to your target and deal with guards as they come
I will say the first game feels like it was made to be played this way, but the second game (which I’m on now) and later unfortunately don’t feel like that. Still gonna try to get through the whole series like this though

I can personally attest that assetto corsa works, and according to protondb iracing is the only sim that doesn’t work. Automobilista 2 not only has a native port but also works under proton, and Lego racers (I’m assuming you’re talking about Lego 2k drive?) works and has a platinum rating
As far as I know, no wheels are natively supported on Linux (running the windows driver in wine doesn’t work) and we have to rely on community made drivers for ffb. It seems like your wheel does have community support, just follow the instructions and you should be good to go. You can also fine tune your wheel with Oversteer
Check my profile for the only post I’ve made, I ended up choosing (and still currently running) r, but keep in mind that every ram stick has to be going the same speed, so you would need to downclock the 2x16 ram to 3000 mhz to match the 2x8
Lots of people did (and still do) play Forza on an Xbox one which uses an HDD, and back when I did as well the game ran just fine
