This is a common theme in memes but I never actually played a game where you “unlock the boss as a playable character”. What are some example games where that happens?
A lot of PS1-era RPGs. Suikoden is the one that remains most prominent in my mind. Non-exhaustive list here though:

Chrono Trigger, the villain for much of the story becomes a playable character. Really solid party member though
